What is dry ageing?
Dry ageing is a traditional process where meat is stored in a carefully controlled environment for a period of time.
The temperature, airflow and humidity are managed so the meat can naturally tenderise and develop deeper flavour.
During this time, moisture slowly evaporates from the meat, which concentrates the flavour. Natural enzymes also begin to break down the muscle fibres, making the meat more tender.
The result?
A richer, nuttier, more intense flavour and a beautifully tender texture.
Why does dry aged meat taste better?
Dry aged meat has a deeper flavour than standard fresh meat.
It is often described as:
- Rich
- Buttery
- Nutty
- Earthy
- More tender
- More intense in flavour
Because the moisture reduces during ageing, the beef flavour becomes more concentrated. It is the kind of meat that does not need much fuss.
A little salt, a hot pan or BBQ, and you are good to go.
What cuts are best for dry ageing?
The best cuts for dry ageing are usually larger, premium cuts with good fat coverage.
Great options include:
- Rib eye
- Scotch fillet
- Sirloin
- T-bone
- Porterhouse
- Standing rib roast
- Whole rib fillet

How long should meat be dry aged?
Dry ageing time can vary depending on the cut and the flavour you want.
As a general guide:
21 Days
Milder Flavour. Improved Tenderness
30–35 days
Richer flavour, more noticeable dry aged taste.
45+ days
More intense, earthy, steakhouse-style flavour.
The longer the meat is aged, the stronger and more developed the flavour becomes.
For most home cooks, around 30 days is a beautiful starting point.
How to cook dry aged steak
Dry aged meat is already full of flavour, so keep it simple.
You’ll need:
- Dry aged steak
- Salt
- Cracked pepper
- Olive oil or neutral oil
- Butter, garlic and rosemary, optional
Method:
- Take the steak out of the fridge about 30–45 minutes before cooking.
- Pat it dry with paper towel.
- Season generously with salt just before cooking. Add pepper if you like, but salt is the main thing.
- Heat your BBQ, grill or pan until very hot.
- Add a little oil, then cook the steak until a deep crust forms.
- Flip and cook the other side.
For extra flavour, add butter, garlic and rosemary near the end and spoon the melted butter over the steak.
Rest the meat for 5–10 minutes before slicing.
Best doneness for dry aged steak
Dry aged steak is best served medium rare to medium.
This keeps the meat juicy while allowing the fat to soften and the flavour to shine.
A rough guide:
- Rare: 50–52°C
- Medium rare: 55–57°C
- Medium: 60–63°C
Use a meat thermometer if you want the best result.
What to serve with dry aged meat
Keep the sides simple so the meat stays the hero.
Try it with:
- Crispy roast potatoes
- Green salad
- Grilled broccolini
- Garlic mushrooms
- Creamy mash
- Red wine jus
- Chimichurri
- Mustard butter
