French Trimmed Lamb Cutlets

A french lamb cutlet has the majority of the fat removed and several inches of the rib bone exposed and cleaned.

Over a medium heat, season lamb with salt and cook for 1-2 minutes each side until lightly charred.

500g is approximately 8 cutlets.
